I’ve had a VERY exciting week. My first niece was born a few days ago and I’m officially a *cool* auntie! It’s been a whirlwind of cuddles, trips back and forth to the hospital, cooking for my sister and speedily filling up my phone with a ridiculous number of photos of the latest addition to the family. Given all the excitement, I’ve not been in the kitchen much and this newsletter is coming to your inboxes a little later in the day than usual. But I do still have a delicious recipe for paid subscribers.
In my last newsletter, I shared a very vanilla birthday cake. It’s a nostalgic, versatile celebration cake that I would have made for my birthday earlier this month if I hadn’t made this lemon meringue pie instead. I was in the mood for something a little different this year and I can confirm that if you stick a candle in it, it works as a wonderful birthday dessert.
There’s also a part of me that wanted one last bright and summery hurrah before we get thrown into the depths of cozy autumnal baking. Don’t get me wrong, I adore this time of year with all the spices, root vegetables and hot steaming puddings drowning in custard. There’ll be lots of that coming up over the next few months but until then, I hope you enjoy this big, fat lemon meringue pie.
