Weekends are for brunching. Having said that, as someone with a flexible working schedule, I much prefer a mid week brunch with my freelance or (increasingly) maternity leave friends. Heading out on a Tuesday at 11am means you never have to queue to get in and can enjoy the luxury of lingering for hours without feeling the rush to give back your table. But there is something about a slow, extended brunch on the weekend that hits differently and when I can’t face standing in line at some of favourite spots, I’ll just make something special at home. Admittedly, I’m much more likely to choose something savoury for my first meal of the day (give me all the eggs) but every now and then, I’ll switch it up for some sweet things.

Cue these crumpets. I’ve only recently come around to crumpets. I don’t think I ever really understood them. English muffins were, and still are my top choice but crumpets just didn’t make much sense to me. Perhaps it was the slightly strange spongey texture or only trying the really cheap supermarket versions. Or just all the holes on the surface. Part of being an adult is retrying foods you previously declared you hated but can’t quite remember why. After being offered and accepting a toasted crumpet for breakfast on a shoot, it turns out they aren’t so bad after all. They just need lots of butter.
